A delicious hearty and homestyle meatloaf inspired by my mum and enjoyed on a regular basis by my tribe. A delicious winter warmer that the entire family will love. Affordable, easy peasy and of course delicious!

What you need
1kg of pasture raised mince (500g pork / 500g beef)
2 eggs beaten
1 diced onion
2 cloves of garlic (minced or diced)
1/4 cup of coconut flour
1 Teaspoon of coriander
1 Teaspoon of paprika
1 teaspoon of thyme
1 teaspoon of sage
1 teaspoon of cumin
Salt & pepper to taste
1/2 cup water
800g of diced tomato
1 tablespoon of apple cider vinegar
1 teaspoon of coffee
2 tablespoons of grass-fed butter, (coconut oil if your dairy free)
Juice of one small lemon
1/4 cup of Worcestershire sauce
1/4 cup of coconut sugar
2 tablespoons of tomato paste
What to do
Preheat oven to 180, and mix together your meatloaf ingredients, form in the shape of a loaf and cook for 30 minutes.
Over a medium heat mix together sauce, pour over meatloaf and cook for a further 35 minutes or until cooked through.
Serve with your favourite veggies! I love to eat it with mashed sweet potato and some steamed greens.
