Easy Apricot Slice
Recently my 2 year old and I started the Auto Immune Protocol, it was tough for her in the first few days watching the bigger kids eat whatever they wanted and it’s hard to explain to a 2 year old why they can’t have their regular snacks so I hit the shops and found some goodies to make a collection of snacks and treats that are not only safe for her but that the rest of the kids will love as well. If I can create kid friendly snacks that make sure nobody feels left out then I figure that’s a winner! I’ll be sharing a few meal plans and recipes in a few weeks time in case you are thinking about starting an AIP journey, but regardless of your food philosophy, i’m certain you will love this easy apricot slice!
What you need
2 cups of shredded coconut
1 & 1/2 cups of medjool dates
2 cups of preservative free apricots
4 tablespoons of coconut oil
What to do
Line a lamington or slice tray with baking paper.
In a food processor combine medjool dates and coconut and blend until nice and sticky.
Press into the baking tray until firm and compact.
Combine apricots and coconut oil in the food processor until it is blended smooth, layer on top of date base evenly.
Place in the fridge for 15-20 minutes remove and cut into desired pieces.
Store in the fridge.
