Grain-Free Carrot Cake

What you will need

1 1/2 cups of Almond meal (ground almonds)
1/2 cup of ground arrowroot or tapioca (you can increase with 1/2 cup of almond meal if you don’t have any)
1 teaspoon of baking powder
1 teaspoon of cinnamon
2 cups of fresh grated carrot
3 eggs
1/2 cup of honey/ maple syrup
1-2 teaspoons of fresh grated ginger (optional)

What to do

Combine ingredients folding the carrot in last, fill a lined cake pan or loaf tray bake at 180 degrees for 25-30 minutes or until middle of the cake springs back. Allow to cool before icing

This is a really yummy cake that doesnt even NEED to be iced. But if your looking to do something fancy, try one of these.

Macadamia & lemon icing

1 cup of macadamia nuts (I like to soak them for a few hours in water, drain and rinse)

Squeeze in the juice of half a fresh lemon

2-3 tablespoons of honey/maple

Blend icing ingredients together, ice the carrot cake, and top with a bit of fresh carrot and macadamia for decoration.

Honey & Lemon Glaze

Fill a shallow pot with some water and heat on the stove.

In a small bowl place together 1/2 cup of honey with the juice from a small lemon.

Once the honey is nice and runny give it a quick mix and pour over warm cake.
