Jen’s “almost meatless” budget paleo pasta
Before we started to eat Paleo, my family and I always endeavoured to have a complete or almost complete meal once a week. It helps stretch the budget and make better quality products more affordable and also takes the load off the meat industry. We used to do this dish with a jar pre-made pasta sauce and traditional pasta, but with a few changes I recreated a budget friendly favourite that our family just loves!
The vegetables are just a suggestion, please add what you love and take out what you don’t!
What you’ll need
- 2-3 zucchinis ( One diced finely and 2 spiralised or turned into vegetable noodles with a peeler or grater)
- A handful of cherry tomatoes cut in half
- 2 diced carrots
- 1 diced red capsicum
- 1 diced brown onion
- 1/2 head of brocolli cut into small florets
- 2-3 cups of diced bacon ( optional )
- 800g of diced tomatoes
- 1 tablespoon of honey
- a good drizzleof olive oil
- Salt, pepper, basil and oregano ( or any of your favourite herbs)
What to do
In a pan fry together diced vegetables until just cooked through ( still firm but a little squishy).
In a small pot mix and heat together diced tomatoes, honey, olive oil and herbs. ( if your in a hurry or dont feel like making another pot dirty I often make a well in the middle of the veggies)
Mix through with vegetables and simmer for about 5- 10 minutes, throw through zucchini noodles and cherry tomatoes for the last minute or 2 and serve srpinkled with some cheese if you wish.
