Gluten & Grain Free Granola

This is always an easy step down from breakfast cereals because it resembles in texture many of your favourite boxed breakfast foods.

A versatile dish to suit your own tastes, and budget. The upfront cost may be a little more than a regular box of cereal but it goes a LONG way and lasts a long time in an airtight container.

What you need

200g of Sunflower seeds

180g of Pepitas

200g of Walnuts or Almonds (leave out if you cannot have nuts or to make it a bit cheaper)

100g of Coconut Flakes

50g of chia (black & white or either one)

100g of dried Goji berries (or other dried fruit)

1Tablespoon of Coconut oil

80-100g of raw honey or maple syrup

1 teaspoon of Vanilla extract

What to do

Pre-heat your oven to 160 degrees. In a food processor blitz together dry ingredients until you get to your desired texture. Add vanilla, coconut oil and honey and mix through. On a large tray bake your granola for about 10 minutes, and then give it a good stir through so it’s evenly cooked. Bake for a further 5-10 minutes. Remove, cool and store. Serve with coconut cream mixed with some berries or any of your favourite fruits. (Great to put in a jar and eat on your way to work/school.
