Looking for something easy, affordable and delicious for the school lunch box? You cannot go wrong with these easy peasy chocolate and peppermint bliss balls created by my son Manny.

What you need
1/2 cup of sunflower seeds
1/2 cup of coconut shredded/flaked
2-3 tablespoons of flax seeds
2-3 tablespoons of chia seed
1-2 tablespoons of cocoa or carob
1 drop of food grade peppermint
1 tablespoon of coconut oil
1 (ish) cup of pitted medjool dates
What to do
In a food processor combine all ingredients together. Roll into teaspoon size balls in the palm of your hand and store in the fridge for 15-20 minutes or until firm.
**Roll balls in cocoa, dessicated coconut or any other topping to make them colourful!
** Get kids to help roll the balls, it’s an easy job for them and helps them with their cooking skills!
