Strawberry Iced Vovo Slice

I was watching this little person eating away at an old school iced vovo biscuit the other day, thinking to myself, man that looks good and dang it’s been awhile! So I made it my mission to try and create that old favourite in a better way, and after a few attempts I think i’ve done it. I mean it’s a little different but let’s face it the old vovo has a pretty long ingredient list of weirdo stuff. Check it out below…
Sugar, Wheat Flour, Raspberry Flavoured Filling (Sugar, Apples, Raspberries, Glucose (From Wheat), Raspberries, Fruit Fibre, Gelling Agent (Pectin), Food Acids (E330, E331), Food Colours (Allura Red AC, Caramel lll (From Wheat), Flavour), Desiccated Coconut, Vegetable Oil, Milk Powder, Salt, Humectant (E422), Gelatine, Baking Powder, Flavour, Emulsifer (Soy Lecithin), Food Colour (Allura Red AC).
humectant… what IS that?
Anyway my iced vovo slice has 6 ingredients total and it will take you only a few seconds to identify them in their natural state and that the kind of food I love. Check out my other delicious and easy peasy recipes in my cook books HERE
Strawberry Iced Vovo Slice
The Base
2 cups of pitted dates
2 cups of shredded coconut
Blend these together really well until they are nice and sticky.
Line a 30x20cm slice tray with baking paper and push in the base ingredients until the base is completely covered and compact.
The Top
1 cup of roughly chopped strawberries
1 teaspoon of vanilla extract
1 cup of unsalted macadamias (cashews would also work)
2 tablespoons of honey/maple syrup
Blend ingredients above together until well combined and smooth.
Spread mixture on top of base evenly, and place in freezer.
Jam and coconut top
1/2 cup of strawberry jam (look for a product with no artificial additives or make your own!)
1/2 cup of dessicated coconut.
After about half an hour in the freezer, remove slice and cut into squares
Place a thin strip of jam in the middle and sprinkle with coconut.
Store in the fridge until ready to eat.

I’m going to attempt it with sesame seeds today. I really want to make it but I can’t taste test it if I use macadamias so I’ll let you know how it goes.
