Sweet Potato Rosti & Home made Baked Beans

A gorgeous sweet potato rosti and home made baked beans makes for an easy peasy gluten – free and affordable breakfast. This one is a favourite by the kids and adults at our place!

Sweet Potato Rosti

What you need

1 medium sweet potato peeled and grated (squeeze out excess liquid)
1 small brown onion finely diced
2 eggs
2 tablespoons of coconut flour
Salt & Pepper to taste
1/4 cup of diced bacon (optional)
In a bowl mix together ingredients until well combined.

In your hands form small balls and fry in a moderate pan for a few minutes each side.

Home made baked beans

What you need

400g can of cannellini beans rinsed & drained
1 cup of diced bacon
1 small onion diced
2 garlic cloves finely diced
800g of diced tomatoes
2 tablespoons of honey (or sweetener of choice)
salt & pepper to taste
In a deep pan fry together onion and garlic until translucent.

What to do

Add bacon and beans and fry for a few minutes.

Add beans, diced tomatoes, honey and salt and pepper and allow to simmer for 15-20 minutes. Remove and serve with sourdough or other yummy toast, your sweet potato rosti and some lovely avocado!

**Note you can add some extra herbs and spices or even liquid smoke to make these extra yummy.
